Rudolph, the Red-Nosed Steak

Though it may not be politically correct to eat Rudolph, it's probably delicious. After all, reindeer are a staple in the Arctic and were brought to North America from Siberia in the late 19th century expressly as a red meat source. And by all accounts, the meat is high-protein, low-fat, and extremely tender.

Today, about 20,000 reindeer are raised on farms around Alaska, a dramatic decline from their heyday in the 1920's, but interest and sales are growing as America's meat-eating population seeks healthier cuts even at premium prices.
